Basil, Bacon & Feta Fritatta

One of the things I enjoy about eggs is their amazing ability to hold things together. Frittas are a case in point, super easy to make, usually with left overs, set in whisked eggs. The perfect early dinner. To beef it up a bite I cooked it with bacon, hash & onions. A quick meal to have on the table in under 20 minutes.

 

Ingredients
Serves 4

  • 8 large eggs
  • 2 tbs of fresh basil (finely chopped)
  • 3 tbs of grated Parmesan
  • 1/2 tsp of salt & 1/4 tsp of black pepper
  • 6 rashers of bacon
  • 1 lb of potatoes (cut into bite sized pieces)
  • 1 large onion (chopped)
  • 2 cloves of garlic (minced)
  • 1/2 cup of Feta

Cuban Black Bean Fritters & Pineapple Rice

These cuban style black bean fritters put a vegetarian spin on traditional crab cakes, served here with a delicious zesty pineapple and cilantro rice.

 

Ingredients
Serves 4

  • 3 1/2 oz bag of long grain rice
  • 2 tsp of butter
  • 1 cup of fresh pineapple (diced)
  • 2 tbsp of fresh cilantro (chopped)
  • 1/4 tsp of salt
  • 15oz tin of black beans (drained)
  • 1 clove of garlic (minced)
  • 1 tsp of cumin (ground)
  • 1/2 tsp of salt
  • 1 egg (beaten)
  • 1 cup of cheddar (grated)
  • 2 jalapenos (deseeded & diced)
  • 1/2 cup of red onion (diced)
  • 1/2 cup of finely crushed tortilla chips
  • Vegetable Oil
  • 1/4 cup of sour cream

Weekinight Meals: Country Captain Inspired Soup

For those that have not experienced country captain, it’s a southern-style casserole of curried chicken and rice. With the change of seasons my wife was feeling a bit under the weather and so I was inspired to fuse the two into a springr style chicken soup borrowing from the captains aromatic middle-eastern flavors.

 

Ingredients
Serves 4

  • 1 1/2 tsp of coriander seeds
  • 1 tsp of fennel seeds
  • 1 tsp of cumin seeds
  • 1/2 tsp of black peppercorns
  • 1/2 tsp of dried chili flakes
  • 1 tsp of cooking oil
  • 4 large chicken breasts (deboned, skinless and sliced)
  • 2 garlic cloves (minced)
  • 1 inch of fresh ginger (grated)
  • 1/2 head of broccoli (diced)
  • 1/2 head of cauliflower (diced)
  • 1/2 tsp of ground turmeric
  • 1/4 stick of cinnamon
  • 1 large courgette (sliced)
  • 2 large carrots (peeled & diced)
  • 1 cup of green beans (diced)
  • A small bunch of green onions (greens reserved to garnish)
  • 1 15oz can of chopped tomatoes
  • 2 cups of chicken broth
  • Salt
  • Pepper

Pan-Roasted Chicken with Harissa Chickpeas

Harissa is a North African paste, a rich blend of herbs and spices like chili, garlic, caraway seeds & coriander. You’ll find it at most Middle Eastern Markets or specialty stores, though a word of caution, no two brands are a like and you’ll need to taste it first and add to taste, the 1/4 cup is starting point!

  • 8 skin-on, bone-in chicken thighs (about 3 lb.)

Tiroler Gröstl

Tiroler Gröstl, commonly called Gröstl is native to Austria, more specifically the hiking region of Tirol. It’s a delicious way of making use of Sunday’s left overs, or make it from scratch.

 

Ingredients
Serves 4

  • 2 tbsp vegetable oil
  • 14oz lardons (or chopped bacon)
  • 1 large onion (finely chopped)
  • 17oz parboiled potatoes (cut into bite sized chunks)
  • 1 tsp carraway seeds
  • 1 tsp smoked paprika
  • Salt
  • Pepper
  • 4 eggs
  • A bunch of fresh arugula
  • Parsley (chopped)

Cuban-Styled Beans & Rice

Traditionally a Cuban staple made with black beans and rice. I chose to mix it up a bit by substituting red kidney beans, leaving out the traditional oregano, giving it a Moroccan twist with ground cumin and a bite with the Spanish smoked paprika.

Ingredients
Serves 4

  • 6 rashers of bacon (chopped)
  • 1 large onion (chopped)
  • 4 garlic cloves (chopped)
  • 1 red bell pepper (deseeded and chopped)
  • 2 cups of long-grain rice
  • 2 bay leaves
  • 2 tbsp of ground cumin
  • 2 tbsp of smoked paprika
  • 2 tbsp of tomato paste
  • 1 15oz can of kidney beans (drained)
  • 3 cups of water
  • salt
  • pepper
  • handful of fresh cilantro

Grilled Pork Chops, Broccoli and Garlic White Beans

This one of my favourite, ‘on the table in 15 minutes’ meals, inspired by one of Jamie Oliver’s recipes. The garlic beans are a perfect compliment to the salty pork and crunch of the blanched broccoli. For a extra bite add in some fresh chili when cooking the beans.

 

Ingredients
Serves 4

  • 14oz broccoli (cut into florets)
  • 4 x 7oz thick pork chops
  • 2 garlic cloves (chopped)
  • 2 deseeded red chilies (sliced) – optional
  • 2 x 15oz tins of cannellini beans
  • 1 lemon
  • olive oil
  • salt
  • pepper

Stuffed Zucchini with Moroccan Ground Beef

While this meal takes a little planning and prep it’s well worth the effort! I’ve made it with ground beef, but traditionally you’d use ground lamb and can bulk it out with some parboiled rice if you desire.

 

Ingredients
Serves 4

  • 2 large zucchini’s (halved lengthwise, seeds removed, but reserved)
  • 1 tbsp of olive oil
  • 1 medium onion (chopped)
  • 1 tbsp of coriander (ground)
  • 2 tbsp of cumin (ground)
  • 1lb of ground beef
  • 1 cup of bread crumbs
  • 2 garlic cloves (minced)
  • 1 egg
  • salt
  • pepper
  • 1 x 14oz tin of chopped tomatoes
  • grated cheeses (mozzarella, parmesan & cheddar)

5-Spice Beef Stir-fry With Eggy Rice

This week I did a round-up of healthy habits to start in 2014, one of which was to try tackling some home cooking. 

This recipe is a great place to start as it’s simple to make, takes only 15-minutes and is packed with fragrant and aromatic spices and fresh vegetables. The perfect mid-week meal!

Ingredients
Serves 4

  • 2 tbsp five spice powder
  • 1 1/8 lbs beef stir fry strips
  • 3 tbsp of soy sauce
  • 1 tbsp vegetable oil
  • 1 inch fresh ginger (peeled and cut into thin stalks)
  • 1 medium red onion (sliced)
  • 1 large carrot (peeled and julienned)
  • 1 tsp corn starch
  • 2 tbsp honey
  • 2 cups rice
  • 1 egg
  • salt
  • 4 green onions (chopped)
  • Handful of fresh cilantro
  • 1 red chili (deseeded and sliced)

Step 1: Mix the 5-spice, soy sauce and beef in a bowl, allow it to marinade for 10 minutes, fill a pot with boiling water, place on a medium heat and cook the rice as per packet instructions. Continue Reading
